Does the color of mold (e.g. pink or black) indicate conditions on a food contact surface?
ANSWER: Under the right conditions, mold and bacteria will grow. Moisture with the combination of the right temperature, time, nutrients, etc., are part of the optimal conditions of when it may grow. However, we should not make general assumptions of the kind of mold or the risk presented based upon the color alone.
Food preparation and food service need to be done under sanitary conditions, and the presence of visible mold or other microbial growth - iregardless of color - is not sanitary.
