Mandy says: Eggs should always be held under refrigeration at under 45º f until they are used. To take the temperature of an egg:
1. Start with clean hands, a clean egg thermometer, and a clean, small container. Make a small crack in the egg against the container.
2. Set the egg into the container to keep it steady (and out of your warm hand).
3. Place the thermometer into the center of the egg.
4. Make sure the temperature is under 45º f.
