How the 2017 Food Code may impact your day-to-day operations

CERTIFICATIONS: Amended the certification requirements to the Person in Charge shall be a Certified Food Protection Manager. (2-102)

DUTY REQUIREMENT FOR PERSON IN CHARGE: Added additional duty requirement that the Person in Charge shall ensure employees are routinely monitoring food temperatures during hot and cold holding. (2-103)

EMERGENCY OPERATION: Added new exception criteria in which the regulatory authority may approve operations to continue during an extended water or electrical outage based on written operational plans. (8-404)
