Ask the Expert: Mandy, can you tell me about the new changes in the 2017 Food Code that affect the person-in-charge at our food establishments?

Yes! There are multiple additions that affect the Person-in-charge, including new procedures that need to be put into place. Today, I'll cover two of them:
CERTIFICATIONS: The certification requirements were amended to require the Person-in-charge shall be a Certified Food Protection Manager. (2-102)
ADDITIONAL DUTY REQUIREMENTS: The Person-in-charge has additional duty requirements in that they shall ensure employees are routinely monitoring food temperatures during hot and cold holding. (2-103)
