Ask the Expert: Mandy, how should bacon be properly stored?

Bacon is considered partially cooked and we generally refer to it as “raw.” Fully cooked bacon can be considered shelf-stable provided certain safety parameters are met. 

In bacon's raw state, we need to treat bacon as a non-RTE food. It should be stored with other raw meats, be cooked to the proper temperature and follow food safety best practices.
